try noodles, pastas, beans or rice are one of my favourites, premade food?
possibly try nut mixes, potato chips, that sort of deal ?

Take a bunch of trail mix, with dried fruits and nuts.
Depends on where you are travelling from, as certain countries have rules about what foodstuffs are allowed to leave the country. Moreover, Spain probably has restrictions on what you can bring into their country, and from where.

Clif bars are good. They’ll keep, and it doesn’t really matter if they get squished. They also have a good amount of protein, especially if you get the Clif Builders.

You don’t have to bring anything. The airline will gladly provide vegan food for you during the trip (might be an extra charge though) and Spain has more food varieties than the US. You can certainly survive on vegetarian/vegan tapas and paellas and salads and wine/beer/Sangria/fruit juices for a week, I guarantee you. If you have a host, let them know and they will accommodate you.
And visiting the food markets of Spain is a treat even for non meat eaters.
If I were traveling abroad, I would not take any food with me. I would most certainly plan to buy what I like and need at a local market. You are only camping for a week, so fresh fruit and veggies will be fine. I don’t know how you camp, but when I go camping, I always have a fire and at least 1 or 2 pots to heat water and cook. Couscous is simple and easy and yummy, also very light to carry in. Don’t forget your protien. Dried beans and rice are light to pack in, and very tasty, if you bring along your favorite seasons. You can put your favorite herbs and spices in little baggies. If you are planning on dried beans, don’t forget to let them soak overnight, so they won’t take as long to cook. There are many dry mixtures on the market, and I’m sure even in Spain you can find some. Just add water and cook.

Agree with the answer about finding out the countries restrictions. In some countries you can get in a LOT of trouble for taking food. Look up restaurants and read blogs before you travel.
